Ingredient
-Duck eggs: 13-15 eggs – at room temperature
-Cinnamon stick: 1 stick
-Star anise: 2
-Black cardamom: 1
-Black pepper: 2-3 gr
-Water: 1 liter
-Table salt: 200-250 gr
-Sugar: 15 gr
-Rice wine: 20 ml

Instruction
1. Egg cleaning
- Wash duck egg with fresh water, choose eggs with good appearance and no cracks
- Use a toothbrush and scrub eggshell to remove dirt, then wash again, rinse and use a cotton cloth to wipe excess water
- Repeat the same process with other eggs
2. Making salted water
- Stir fry cinnamon stick, star anise, black cardamom until fragrant
If you don’t prefer cinnamon, star anise and cardamom fragrant in salted egg, then you can skip this stage
- Pour 1 liter of water into frying pan, stir quickly
- Then add gently 200 gr table salt into and stir well until salt completely dissolved in water
- Bring to boil and add 15 gr sugar into salted water. Simmer in 2-3 minutes before turn off the stove and let it cool completely at room temperature
- Pour 20 ml rice wine in cool salted water, stir well
- Soak glass jars in hot water to sterilize, then drain until drain dry
- Arrange each duck egg into dry jar. Use a tablespoon to pour salted water until it flooded eggs surface.
- Clean mouth jar and close tightly. Reserve at room temperature in 4-5 weeks
Or 3-4 weeks if you use chicken egg instead of duck egg
- After reserving for 4 weeks, break an egg to test its quality. If the yolk is harden and turn to clear deep orange color; clear egg white with no bad smell, the your eggs is successfully salted and can be used right away.
- Remove eggs from salted water, wash and rinse in water, drain and reserve in fridge for 2-3 weeks

ATTENTION!
- You have to make sure that there’s no crack on egg shell to prevent it from pervading by salted water or bacteria into egg
- Eggs and glass jar have to be cleaned and dried completely before using
- Hot or warm water will affects egg and salting process so you should make sure salted water has to be cool completely before pouring into egg jar
