Red Velvet Crinkles

Ingredient
-All purpose flour: 200 gr
-Cocoa powder: 12 gr
-Baking powder: 1 tsp (5 gr)
-Baking soda: ¼ tsp
-Salt: a small pinch
-Unsalted butter: 80 gr
-Powdered sugar: 80 gr
-Cream cheese: 30 gr
-Egg: 2 – 63-65 gr/ each (shell included)
-Lime juice: 1 tsp (5 ml)
-Red food coloring: 2-3 drops
Vanilla extract: ½ tsp

Decorating
-Powdered sugar: 50 gr for coating

Instruction

  • In a mixing bowl whisk together flour, cocoa powder, baking powder, baking soda and salt, then set aside. 
  • In another bowl, whip butter, cream cheese and granulated sugar until pale and fluffy. 
  • Mix in eggs 1 at a time, blending until combined after each addition. 
  • Mix in vanilla extract, lemon juice and red food coloring. 
  • Slowly add in dry ingredients and mix just until combined. Cover bowl with plastic wrap and chill 2-3 hours or until firm enough to shape into balls.
  • Preheat oven to 350°F (180°C). Pour powdered sugar into a bowl. Remove dough from the refrigerator, scoop dough out and with buttered hands, shape into medium balls (about 1-2 Tbsp each).
  • Roll cookie dough balls into powdered sugar and evenly coat. 
  • Transfer the shaped doughs on parchment paper lined baking sheets, then bake in preheated oven 13 – 14 minutes. 
  • Allow to rest on cookie sheet several minutes then transfer to a wire rack to cool completely. Store in an airtight container.

If you want them a little more chocolatey you can replace 2 – 3 Tbsp of the flour with 2 – 3 additional Tbsp of cocoa powder

⚠️ ATTENTION

  1. Crinkle batter should be refrigerated in fridge in 2-3 hours to firm, so that you can shape the balls easier. In case if the batter is to watery or sticky, you can mix it with 10-20 gr flour into.
  2. The sugar coated cookies should be baked immediately because the sugar with absorb into cookies if you let them stay at room temperature for too long.
  3. The cookies can be a little flat after baking (because of melting butter) but the taste will remain the same.
