Ingredient
-Salted egg yolk: 1 ~17 gr
-Egg white: 1 ~35-40 gr
-All purpose flour: 45 gr
-Unsalted butter: 35 gr – soften at room temperature
-Powdered sugar: 35 gr
-Salt: ½ tsp ~2.5 gr
-Sliced almond: 100-150 gr
Instruction
- Preheat oven at 160 Celsius degree in 10 minutes
- Mash cooked salted egg yolk in a bowl
- Whisk unsalted butter with powdered sugar in another bowl until creamy
- Add mashed salted egg yolk and egg into butter bowl, mix well
- Mix salt and all purpose flour together, then sieve the flour mixture into butter bowl. Mix until all ingredients combined
- Line parchment paper on baking tray, use a spoon to flatten a small amount of salted egg batter (4-5 cm round shape or any shape as you prefer)
- Place some slices of almond on its surface. You can add many almond slices as you want
- Place baking tray in oven and bake in 10-12 minutes at 160 Celsius degree
- When the crisps turn to golden brown, remove them from oven and let it cool on rack
- You can serve them with a cup of tea/ coffee or can restore them in closed bag/ jar (max 2 -3 days)
ATTENTION!
- Salted egg yolk should be mashed as fine as powder to prevent any salted egg lumps in batter
- The crisps turn to golden brown really quick so you need to pay more attention on baking time and oven temperature in last minutes
