Ingredient
- Puff pastry shell
-Unsalted butter: 115 gr
-All purpose flour: 125 gr – divide into 2 parts: 25 gr and 100 gr
-Flour: 25-30 gr for flouring
-Fresh water: 45 ml
-Sugar: 3 gr
-Lime/ lemon juice: ½ tsp ~3 ml
-Salt: a pinch - Apple fillings
-Apple: 1
-Apple jam: 60 gr – can be replace with your favorite jam
Kitchen utensil
-Cupcake Baking Pan: 1 – 12 holes at medium size, or 10 silicone cupcake molds
-Rolling pin and baking mat: 1
Instruction
1. Puff pastry shell
You can use ready-made puff pastry or can make it by yourself with instruction below:
- Cut cold unsalted butter into cube and add to mixing bowl with 25 gr all purpose flour
- Use whisking machine or fingers to knead and combine quickly butter with flour. If the butter melt while processing, add some drops of cold water or place the mixing bowl in freezer for 5 minutes for cooling butter.
- Transfer the butter onto tray that lined parchment paper or plastic wrap. Shape it into square or rectangle form, then wrap up and place in freezer for 20 minutes
- In another bowl, add 100 gr all purpose flour, sugar and salt. Use a spoon to mix the ingredients.
- Create a hole in dry ingredient bowl, pour into 45 ml water with ½ tsp lime juice and mix with mixer or by hand
- Knead and mix the dough in 1-2 minutes until the ingredient all combined
- Wrap the dough in plastic wrap and place in fridge for 10 minutes
- Cover a thin layer of flour on baking mat and rolling pin. Flatten the dough into rectangle sheet (thickness around 0.4-0.5 cm)
- Place the butter onto the flattened dough and wrap it up. Seal the edges.
- Flatten the butter-dough and fold the top third down to the centre, then fold two thirds down and rotate the dough 90 degree.
- Repeat step 10 five times (six times in total, includes the first fold). And your puff pastry is completed.
2. Apple fillings
- Wash and soak apples in salt water to remove any chemical residues. Then drain.
- Cut apples a half, cut thin slices.
You should cut really thin apple slices for rolling. If your apples is crunchy or not able to roll, then boil apple slices in 3-5 minutes to make them softer
- Soak apple slices in salt water to prevent apple slices from browning
- Cover cutting board or baking mat a thin layer of flour
- Cut puff pastry into strips (20×3 cm) and flatten.
- Brush a thin layer of apple jam (or your favorite jam) on the strips
You can find Handmade apple jam recipes as below
- Place slice by slice of apple on ½ edge of puff pastry strips, then fold ½ up and seal by fingers.
- Roll the strips up and place into cupcake baking tray.
- Place baking tray in fridge for 10 minutes before baking
3. Baking
- Preheat oven at 175 Celsius degree in 15 minutes. Place the baking tray in oven at 175 Celsius degree in 35 minutes, until the pastries rise and turn into golden brown color.
- Remove the baking tray from oven, let it sit in 10 minutes and remove the pastries by using a fork. Chill completely on rack.
- Best serve within a day
