Passion Fruit Cupcake

1. Whipping cream sponge cake
-All purpose flour: 150 gr
-Whipping cream: 240 ml (fat more than 30%)
-Granulated sugar: 110 gr
-Egg: 2 (63-65 gr/ each include shell)
-Baking powder: 7 gr
-Vanilla extract: ½ tsp
-Salt: ½ tsp

2. Passion fruit frosting
-Whipping cream: 150 ml (fat more than 30%)
-Passion fruit syrup: 60-80 gr

Passion fruit syrup: 30-50 gr – optional

Kitchen utensil
Cupcake baking tray or cupcake mold
Electric egg beater


1. Whipping cream sponge cake

  • Preheat oven at 165 Celsius degree in 10-15 minutes
  • Mix all purpose flour, salt and baking powder in a clean bowl. Put aside
  • Whisk 240 ml whipping cream with 110 gr sugar to creamy
  • Beat 2 eggs with ½ tsp vanilla extract in a clean bowl and pour in whipping cream bowl. Mix well
  • Divide flour mixture into 2-3 parts. Sieve each part into mixing bowl

Note: don’t overmix the cake batter

  • Place cupcake paper into baking tray or cupcake mold
  • Use a spoon or piping bag to pour cake batter into cupcake holes

Because the cake will rise more when baking so only pour cake batter into ⅔ of cupcake height. 

  • Bring the cakes to bake at 165 Celsius degree in 30 minutes or until their surface turn into golden brown color.
  • Remove the cakes from mold/ tray by using a folk and let them cool completely on rack

2. Passion fruit frosting

  • Add 60 gr passion fruit syrup into whipping cream bowl.

If you prefer stronger passion fruit flavor, increase 20 gr passion fruit syrup in this recipes. You can find the instruction of fast and delicious passion fruit syrup as below 

  • Use an electric egg beater to whisk the cream to creamy.
  • Refrigerate passion fruit cream in freezer in 20 minutes for cupcake frosting 

You also can store the cream in refrigerate and place it freezer 20 minutes before frosting

3. Serving

  • Transfer passion fruit cream into piping bag. You can choose any kind of piping tip as your favorite (I used 1M tip in the video)
  • Pipe the frosting on cupcake surface. You can enhance its flavor by add a small amount of passion fruit syrup on top of frosting

Please note that the cupcakes have to be chilled completely or they will melt passion fruit frosting immediately

  • Reserve whipping cream cupcake in closed box/ bag in 1-2 days and only do the frosting right before serving
